Interesting with the honey, guess it depends on just how much flavour it imparts. Generic honey or something special?

It's Orange Blossom Honey. We'll see what comes across, and given I intend to lay this down for some years to come, will see how it develops too.

Nope. 120 for big maltiness and colour development, as recommended in the Barley Wine book in the Classic Styles Series.

Currently dry-hopping.

FG was 1.018 which gives me 12.2%. The small taste I had at transfer was pleasant, if potent.

Bottled and sealed with wax. This is going to be great over time, and I think a recipe I'll rebrew so I can do some vertical tastings.

Cracked one of these this evening - it's fecking freezing out in the wilds of West Wales.

Aroma - Pronounced hop aroma - Citrus, orange peel. Slight caramel malt aroma. No noticeable alochol aromas.

Appearance - Copper, clear, good head retention.

Flavour - Rich maltiness, and the orange blossom honey is definitely discernable - sweetness lingers but isn't cloying. Pronounced bitterness, with a citrusy-orangey hop flavour. Balance definitely towards hops (but this will likely change over time).

Mouthfeel - Carbonation on the low side, full bodied and a bit chewy but not cloying. Lingering bitter finish and a hint of honey stays on the palate. Noticeable warmth from alchohol.

Overall I'm very happy with this beer, and expect if will improve further with age. My biggest disappointment is that I gave half the batch to someone as a wedding present.
