I have a keg question;

Force carbonation? How?

Is it a case of fitting the coupler with a stop end on the beer out and gassing up or is there a bit more to it?

Pretty much, cool the beer if possible 1st. Connect up at 25psi, add the gas and agitate the keg for a few minutes (rolling is easiest) to aid adsorption. If you have to disconnect to agitate then you should repeat the process a few times.

Or alternatively leave connected at 25psi for 24 hours.

Obviously you need to reduce the pressure for serving which probably means a few pints of foam, unless you have a connector with a pressure release valve.
