I made this (with Julian) at the beginning of October for the BCB Winter warmer comp, but unfortunately have gone and drunk the bloody lot! Sorry Julian old chap, you never got to try it in all it's glory, but I did bottle condition some without the coffee and vanilla additions and will bring to the next BBC.
Coffee Vanilla Milk Stout
3.292 kg Maris Otter Pale
0.454 kg Crystal
0.454 kg Munich
0.454 kg Roasted Barley
0.400 kg Flaked Barley
0.340 kg Chocolate Malt
0.227 kg Oat Malt
36 g Willamette @ 60
0.454 kg Lactose @ 15
1 Vanilla Pod @ 5
22 l post boil
24 IBU
1.066 OG
WLP002
Primary fermentation for about 2 weeks as the beer stopped at 1.026 which I thought was too high, despite raising the temp and rousing. This gave an apparent attenuation of 60 % while White Labs say WLP002 has an attenuation range of 63 - 70 %.
Apparent Attenuation = (1 - (FG-1/OG-1)) x 100
= (1- (0.026/0.066)) x 100 = 60.6%
However, if we take the lactose out of the equation (6 GU), we have OG 1.060 and FG 1.020, so:
AA = (1-(0.02/0.06))x100 = 66.66 %
So I decided terminal gravity had been reached.
Then added ~ 2 litres of coffee toddy (cold steeped finca de licho + ~100ml vanilla extract (2 chopped up vanilla pods soaked in 250 ml of vodka) to ~15 l of finished beer in the in keg.
It was bloody lovely!
