Brewing this today from Durden. Have altered the timing of the hops to spread them throughout the boil, because otherwise the IBU's are ridiculous:

PS the alpha on the fuggles is anyone's guess because they are home grown. As are the Mathen, which are a variety of Golding.

I used some green home grown fuggles, even allowing for the fact they were wet, I'd say the α% was higher than 4.9 typically quoted, perhaps because they were so fresh?

I'd just follow the 5% avaerage for Fuggles and Goldings a la the Durden Park book.

AA% does relate to age, but you have no idea where you're starting without taking samples to a lab.

Yup, I just used the defaults in brew mate.
Finished 5 points over gravity and 2 litres down. Have been chopping and changing my boiler recently so not really got a proper handle on my losses yet. Should settle down for future brews.
I am considering only brewing 2-3 styles of beer for the next few months to really try and nail the styles. These would be:
American Pale Ale
Durden Pale (like this beer)
AN other Bitter 93% pale, 7% caramalt

I will alter the hop varieties but keep the IBU's, approx weight of late hops, yeasts, OGs etc the same within each style.

I feel you on this. I've done two brews on a larger system (one on now), with a third to go middle of this week. All learning....
