Probably a bit early to say whether this will be a 'house' saison or not, but it rhymes, so there.
The recipe is largely based on Ali's Enchantress, which had a great yeast character, so I will be trying to emulate the same ferment. I have added in a portion of Munich malt to the grist for a bit of complexity, and am also using fuggles in the boil, as I felt calypso on its own was too floral.
1.058
25.5 IBU
German Pils 77 %
Munich 15 %
White sugar 8 %
Single infusion light body mash. 90 min boil.
Fuggles to 7.5 IBU @ 60 mins
Fugglypso to 13 IBU @ 15 mins
Fugglypso to 5 IBU @ 5 mins
Calypso 1.45 g/l @ 0 mins
WLP566 Saison II
Calypso 2.5 g/l dry-hop
Fuggles 1.5 g/l dry-hop
Gonna start it off around 22 C and gradually raise it up to 35 C over a couple of weeks. Dry-hops will go in the primary for the second week.

Re: Maison Saison
I like how all your multiple hop additions are now compounds.
Mine was a multi-step mash (which gave around 85% efficiency), so it will be interesting to see how the two compare given the same yeast and similar fermentation regime.
I dry hopped in the keg for a week. Dry hopping with fermentation going on supposedly leads to a loss of hop character.

Only when it's an equal addition of each hop - makes it easier to explain.alikocho wrote:I like how all your multiple hop additions are now compounds.
I'll bear that in mind about the dry-hopping and may move it to secondary.

Re: Maison Saison
Just weighed out the hops and it seems I haven't kept my inventory in order - only just enough fuggles for the boil, none left for dry-hop.
I don't really want a whole 100 g at the moment, so can anyone spare me 30 g?

My inventory says I have 60g of Fuggles somewhere in the freezer...
You can have them if you want.

Sweeeet. Presumably, like mine did, they came from the first ever bulk hop order. Mmmmmmm, fresh.
