An American wheat beer with kiwi hops - a good opportunity to use up some wheat I've had lying around in conjunction with the washed yeast from last week's alt - wlp036 is the zum uerige strain according to Mr malty, as is wlp320, American weisse, although via another brewery.

45% Maris otter pale
5% caramalt
158 f mash for 20 minutes + 10 min mash out at 170 f. No sparge. Conversion complete after exactly 20 mins according to iodine test.
Pacific gem to 12 ibu @ 60
Nelson sauvin to 8 ibu @ 15
NZ hallertauer aroma to 10 ibu @ 5
1.45 g/l nelson sauvin @ 0
3 g/l nelson sauvin dry hop (I might up this...)

Lautering didn't go so well - I came in a few points short of pre-boil gravity - so I added about 200 g honey, which should also lighten the body a bit. On the lautering front I think I might be running it off too fast, as the final runnings (the dregs of the mash run) were coming out at 1.040.
It was bubbling away nicely this morning, though the temp was 22 c. It smells fine though, so I'll risk it and not stick it in a water bath.
