Red Mapper

Post by MapperMatt »

OK, so I am planning to brew an American Amber this weekend. I have based my recipe on Jamil's recipe in Brewing Classic Styles. However, taking into consideration Mark and Ali's comments on my last recipe, this one seems woefully low on hops.

I know we have discussed that the recipes in the book are a bit dated now, but I have no experience of brewing this style so would be grateful on thoughts re: hopping rates and whether to dry hop etc.

Thanks

Recipe below.

Depends how hoppy you want it I say. That looks like it will make decent beer, though definitely at the malty end of things.

American Amber is a fairly broad style, but to be honest most examples tend to crank the late hops, and I'd definitely crank your recipe up. Jamil's recipes in BCS were superseded by his own Evil Twin (which I shall be drinking next Wednesday night in Seattle).

Here's the recipe:

Ingredients for 6 U.S. gallons (23 liters)
Target Original Gravity: 1.066 (16.21 Plato)
Approximate Final Gravity: 1.016 (4.08 Plato)
Brewhouse Efficiency: 70%
Anticipated SRM: 17
Anticipated IBU: 23.8
Anticipated ABV: 6.66%
Wort Boil Time: 90 minutes
12 lb (5.44 kg) British Pale Malt 3L
1 lb (0.45 kg) Crystal 40L
1 lb (0.45 kg) Munich Malt 8L
0.50 lb (0.22 kg) Victory Malt 25L
0.50 lb (0.22 kg) Crystal 120L
0.25 lb (0.11 kg) Pale Chocolate Malt 200L
0.5 oz. (14 g) Centennial pellet hops, 10% alpha acid (20 min.) (6.4 IBU)
0.5 oz. (14 g) Amarillo pellet hops, 7% alpha acid (20 min.) (4.5 IBU)
1 oz. (28 g) Centennial pellet hops, 10% alpha acid (10 min.) (7.6 IBU)
1 oz. (28 g) Amarillo pellet hops, 7% alpha acid (10 min.) (5.3 IBU)
1 oz. (28 g) Centennial pellet hops, 10% alpha acid (0 min.) (0 IBU)
1 oz. (28 g) Amarillo pellet hops, 7% alpha acid (0 min.) (0 IBU)

Returning to your orginal recipe

At least double (if not quadruple) the 20 minute addition and at least quadruple the flameout. Dry hop with the same quantity of flameout hops. Don't be concerned about over-hopping - it'll take much more to do that, assuming that over-hopping is possible (I don't personally believe you can over-hop a beer, you can just over-hop someone's taste)

I'll have more after a session with Lagunitas on hop-forward beers as the NHC next week.
