Vienna malt - suggestions?

Post by I_used_to_brew »

I ordered some hops (Sorachi Ace, yum yum) late-ish at night recently, clearly had one of those moments and ordered some grain too.....

Anyway I have 5k of Vienna malt.

Any suggestions? As you know I brew to 38litres so this is going to have to be supplemented with another malt, I have the usual suspects - pale, munich, brown.

I can ferment at normal or l*ger temps with beer or l*ger yeast.

I say go for the Vienna lager with lots of Cascade.

Similar to the beer people seemed to love at a recent meeting.

Vienna + pale or Vienna+pale/munich ?

This means nothing to me.

It means use Vienna and pale malt or Vienna and a mix of pale and munich. The assumption is that Vienna Malt dominates the grist.

The best advice on brewing these is in Ray Daniels, Designing Great Beers

I might just swap it for something more interesting.

Just drinking Thornbridge Kill Your Darlings which is a Vienna Lager with Amarillo and Tettnang and tastes mighty fine.

Do you want to swap your malt for something?
