This is based on http://www.homebrewersassociation.org/h ... ale-clone/, but tweaked for the malt I had in store. Quantities are for 40litres.
7.9kg English pale malt
2.2kg Munich malt
0.43kg Caramalt
Bristol Water treated with Campden tablet, 22.9g CaCl2, and acidified with H2SO4.
Mash 1 hour at 63C.
Boil 1 hour with the following hop additions:
55g Centennial (A/A 11.6%) @ 45mins
55g Centennial (A/A 11.6%) @ 30mins
Yeast: US-05
172g Centennial (A/A 11.6%) @ dry hop, added after 1 week, removed a week later.

I would be reluctant to waste a lovely hop like centennial at 45 or 30 mins. I'd bitter with e.g. herkules \ warrior @60 and add a load of centennial at flameout for steep. Like the dry hopping though...

I agree with the comment on bittering hops, especially with the current hop market. And I don't really think splitting 45 and 30 min additions will do much - all volatile hop oils will boil off anyway.

some similar \ supporting comments on a reddit thread regarding this clone. 55IBU IMO is pretty vanilla for an AIPA. One of the most successful beers in US homebrew comps comes out at 120IBU's. Have you brewed this mark?

Yes Steve, this was the beer I brought to the January meeting that hadn't quite fermented dry.
