Enzyme conversion question - Oatmeal

G'day learned community, I'm about to brew up a stout (roughly), using a partial/mini mash.

I've got a bad feeling i need to add some pale malt to my ingredients list though.

Could anyone advise if this will work by itself, or should i add/substitute some pale malt?:

500g Flaked Barley
250g Chocolate Malt
250g Special B
340g Rolled Oats
2Kg Amber DME

I was thinking of going down the shop and getting 500 - 750g of Pale malt to add to it.

I'd rather not though!

Thoughts anyone?

you won't extract anything from the flaked barley or the rolled oats without enzymes, which can only come from a base malt. The dark side beckons, it's time to make that leap to all grain. Brew in the Bag in a blue cool box would be a simple and cheap option. Do it, do it.

What are you trying to achieve with the dark malt? Just colour and a bit of flavour ? I doubt that there is much of a fermentable contribution from the dark malts. I'm pretty sure you could add them to the boil, you don't have to mash dark grain.

Also Steve is bang on, time to get a mash tun

Is the DME Dried Malt Extract or DIASTATIC (liquid) Malt Extract? If it's the latter then it will convert the other ingredients happily if you do a mash at 66C.

You can get DIASTATIC malt extract from any of the local home brew shops. Incidentally, I always read DME as DIASTATIC because for many years the DRIED stuff wasn't available to home brewers.

Ive never heard of diastatic malt extract until now. Just DME + LME; Dried Malt Extract and
Liquid Malt Extract.

I'm using plain old dried malt extract.

I just went to the brew shop and bought some Maris Otter. I guess this will be what is termed a 'mini-mash'.

EDME used to make a Diastatic malt extract, was very common in homebrew shops and, it seems, is no longer made. Muntons still do one called 'Century', should be readily available.

A good mate of mine would be HORRIFIED by that pic!
