Stout with Irish Yeast

A bit of a departure for me from my usual brew day this, using a 40L mash tun and brewing 40L of beer.This will be split into two batches of er.. 20L each and fermented with different yeasts. One will be fermented with Wyeast 1084 'Irish Ale' purported by some to be the Guinness strain and the other with good old S04.

I have ended up with two fermenters with as suspected, bang 20L in each,my boiler did struggle a bit to get a good rolling boil I think I will have to drill a hole in my boiler lid and clamp it down tight just like I did with my old electrim boiler years ago!

The recipe is below. I was going to brew a clone of Dave Lines Guinness Clone from his book brewing beers like those you buy, (shame it the only good recipe in the book) but since I did not have the hops I thought I'd use American hops including my hop of the moment Simcoe.

Then I thought I might as will experiment with the grist too, so that’s how I got to the recipe.
It will be interesting to see what the different yeasts do with the wort.
