That is true, but when you have suffered with an infection like me..

gravity for me, dropping about 2 feet to the FV.
I like to keep a bottle of stimulant handy in case I see a snake, which I also keep handy.

Really no need to autoclave a plate chiller. If cleaned properly and backflusshed all you need to do is run hot wort through on recirc for a few minutes, and you'll be fine. And they are very fast. I just took 1/2 bbl down to pitching temps in 8 minutes with mine (which, admittedly is fairly large).
