Stout stopped fermenting

Post by Mike Palmer »

My stout stopped fermenting when I reracked it into my conditioning vessel. OG 1.063, reracked at 1.023. Hasn't bubbled since, though there is a wee bit of yeast at the bottom of the carboy.

I plan to rerack again into another vessel with a little more yeast in it, but should I bottle immediately, or is the current gravity too high for glass bottles?

You'll have to divulge the recipe and the yeast, but my first thought is that's not too far off the fg I would expect for a stout. I certainly wouldn't be thinking about adding mote yeast.

Recipe:

.5kg crushed chocolate malt
.25kg crushed black
.5kg instant oatmeal

Steeped 30min @ 68c

3kg light spray malt
1kg med. SM
.5kg extra dark SM

2oz northern brewer 0h
3/4oz NB 0.20h
3/4oz NB 0.40h
1 1/2oz cascade 1.00h

Boil 1.15h, 15l

added to 10l in fermentor
S04 yeast OG 1.063, reracked at 1.023 with 1oz cascade

Used S04 for the first time, went like Billy-O and covered the magnolia-coloured wall with the dark stuff when the bubbler clogged.

Beer Engine predicts an og of 1.072 and fg of 1.020 so you're pretty much spot on. I'd be thinking about getting it packaged :)

SO-4 is usually finished in 3 days, I can brew one weekend and package the next with it.

That looks about right to me. With that much DME you will have bumped the FG a bit.

Thank you for your advice and offer of bottles, but with some effort I managed to drain six Beer Factory Ultimate Stouts last night. Something similar this evening and I can bottle on Monday afternoon.

I can imagine that was a considerable ordeal for you..........

My stout finished at 1.028 for 7%ABV, I was glad to get it down to that after two weeks
