Did a brew on Friday which was a 90 minute mash of
4 Kg Pale
1 Kg Munich
100g Torrefied Wheat
hopped with
40g EKG 5.68% 90 min
30g Citra 13.8% 30 min
70g Fuggles 5.7% 15 min
5g Citra 13.8% end of boil
Which the brew app on my phone calculated would give 57 IBU. The OG was 1.05
Now, I was trying to go for a pretty hoppy pale ale and after reading the article on late hopping decided on this hopping schedule. I'm a bit concerned I may have gone a bit far though as the wort tasted REALLY bitter just before i pitched the yeast. I'm hoping it will mellow out a little but if it doesn't does anyone have any tips on how i might help it along? It doesn't taste like it will be drinkable at the moment but it did just go in the fermenter.
Maybe add some spray malt? I reckon it will end up really strong if i do though and I was aiming for about 4.5% - 5.5%

Leave it to ferment and don't panic. Relax, have a homebrew, etc. etc.

I would call 57IBU about right, certainly not over hopped.

I wouldn't say you over hopped.
In fact with an SG of 1.050 and 57 IBU that gives you a Bittering Units to Gravity Units (BU:GU) units ratio of 1.01. As a guide, the ratio on my black IPA is 1.22, the Imperial IPA in Brewing Classic Styles is 3.49, while the Mild in the book is 0.48. So, 1.01 for a hoppy Pale Ale sounds about right!
It's worth remembering that the yeast will scalp some of what you tasted before fermentation, and conditioning will round out the edges. It's good to taste your wort, but it will be very different.

Well I just tried the first bottle (probably somewhat prematurely but I get impatient), I have to say i'm pretty happy with it :-)
It is certainly hoppy, but not more than I wanted it to be. I may change the hop schedule if i did it again to have more additions in smaller quantities after trying Rogers Bristol APA at BCB but i'm pretty happy over all.
FG was 1.010 giving me about 5.5% which was on the upper end of what I wanted but within range.
I'll bring a couple of bottles along to the next BBC.
