 Post subject: lager yeast

in the my wife,s lager barrel which is nearly empty is a certain amount of sediment (yeast deposits) would it be possible to start another lager from it if so how much would i need to use

I wouldn't use it as it will not be very viable. It is old, not particularly flocculent (as the flocculent cells would have dropped straight after primary fermentation) and also has been exposed to alcohol and pressure for some time. I think you will get better results from using fresh yeast.

If you want to re - use (ale) yeast i would advise top - cropping the krausen when the yeast is at maximum activity - say 24 hours into primary fermentation. use a sanitised ladle and a sanitised mason or kilner jar and just scoop the yeasty foam into the jar and seal, venting every day or so until it stops gassing - store in the fridge. I have found that this is usually strong and viable and can be pitched straight into wort with no starter for up to a month after harvesting - sometimes longer depending on the yeast strain.
