Ok so I started a brew before Xmas and have left it for just over two weeks now. I am worried about bottling now with sugar, will it be ok or will all the yeast have died and settled?

All the yeast won't have died, that's the point of bottle conditioning.
The safest way is to confirm that the SG is stable - same reading for a few days. With practice you can predict your final gravity and bottle 1-2 points above that without adding sugar.
As a rule though, 10 days to 2 weeks in the FV is fine before bottling.

mix the sugar with boiling water let it cool then put in your bottle

I generally rack to secondary after about a week, then leave for no of weeks based on og ie 1.040 4 weeks, 1.050 5 weeks etc.
Dependent on the yeast you use the manufacturer will detail what fg it ferments down to, but this will differ depending on how fermentable your wort is.
Usually I bring my beer to room temperature before adding sugar solution (to keg), if in fv I would rack to clean container add sugar solution then bottle from there.
