ESB

Post by MapperMatt »

Hello all,

Does anyone have a recipe for Fullers ESB apart from the one that is in Grahma Wheeler's book?

Thanks

Matt

I have the one from the Jamil Show. They brewed this twice, I've brewed it once. Pretty damn close.

19 litres
OG: 1.059

95% pale malt
5% extra dark Crystal

UK Target 11.0 % 19 g 60 Min From End
UK Challenger 7.5 % 15 g 5 Min From End
UK Northdown 8.5 % 15 g 5 Min From End
UK Golding 4.8 % 3 g 5 Min From End
UK Golding 4.8 % 21 g Dry-Hopped

WLP002

Mash at 149F

Cheers Ali,

That looks good. I have Dark Crystal rather than extra dark but it should be OK. I was reluctant to go with the Wheeler recipe...

Congrats on the new addition by the way!

Hi there,

You're correct, Dave Line does indeed have a recipe for Fullers ESB in his (and for me at the time, inspirational) book ' Brewing Beers like those you buy'. It was the first malt extract recipe I tried and it spurred me on to full mash brewing as it was very thin and nothing like ESB!

So it was, in a way a very good beer to brew!

There is however, a recipe published in Wheeler & Protz ' Brew Classic European Beers At Home' Published by Camra.
The Main difference from the recipe supplied by Ali is that it includes Flaked Miaze. Which whilst I am slightly uncomfortable about the use of adjuncts, I would think the Fuller's accountants would insist was used, in such a high gravity beer, in order to keep costs down, (allegedly).

This recipe is different from the recipe published in Wheeler's 3rd Edition (2009) of Brew your Own British Real Ale,
I must admit most recipes in this book are disappointing, simplified and I think 'dumbed down'.

I've not tried either of the latterly published recipes, but brewed with, As Ali says, WLP002 both may get close.

Maybe, brew both, smuggle them into you local Fuller's pub and compare?!
The craft beer revolution will not be sanitised!

I have the grist from the horse's mouth at Fullers, so to speak.

Same grist for Golden Pride, ESB, London Pride and Chiswick Bitter. Partigyled.

WLP002 is the Fullers strain (as is Wyeast 1968).

Mine was almost bang on (I got take out from a Fullers pub for comparison).

Hello all,

I have been following your group posts, your all seems really enthusiastic, I wish I lived closer so I could join.

Also, just wanted to say, the crystal used by Fullers is the normal colour ie about 150EBC, not dark crystal.

Hope this may be of interest.

Fullers say they use Simpsons Dark Crystal which is about 150EBC......., so yes. But, when JZ et al brewed it on a 5 gallon scale they found it didn't yield enough of a malty flavour.

There's some detail on older renditions of Fullers beers here (including using flaked maize) - http://barclayperkins.blogspot.com/2009 ... lp-lp.html
