My experience of the last few years is that you'll get some yeast action if you bottle before June, after the end of August the yeast is defunct and won't carbonate. (This is with a natural yeast fermentation!!)
Thanks Roger. I think using juice may be a bit of a conceit, so will probably go with sugar.
