Winter Warmer mini-comp - December 6th

I remember it ending up there : ) Good night and some good beers. Gutted mine failed to hit the spot; have tried 3 bottles since and one of those was off/infected, same ratio as Thursday. Oh well.

Burns stuff. And makes beer. Usually not at the same time.

After an absence I am back on the forum, due to a complete lack of urgency getting a new PC.

I take it that when you said 'How about the recipe, Steve?' you were referring to my Winter Warmer entry.

Here goes:

Imaginatively named Seven per cent Stout


OG 1.070
IBUs 67


Grist

4013g Pale Malt (Organic Quench) 51%
3541g Brown Malt 45%
236g Special Carafa I 3%
78g Special Carafa III 1%


No water treatments used
Mashed at 66°C for 180 Minutes

90 min boil

90 minute hops
34g Simcoe @ 14.2% A.A

60 minute hops
34g Bramling Cross @ 6.3% A.A

15 minute hops
20g Progress @ 6.4% A.A

0 min hops
20g Progress @ 6.4% A.A
100g Bramling Cross @ 6.3 % A.A

Fermented with Gervin (aka Nottingham?) Yeast for 3 weeks
Aged on 200g American Bourbon oak chips for about 5 – 6 Months

Entry bottles conditioned for about eight weeks before competition.

I was actually hoping for the hot sauce recipe! Prefer this one to the last I had, I think because it has a tomato base and the garlic is a bit more prominent. Great flavour!

Its based on Rogers recipe:

I've been using this hot sauce recipe, but adding some smoked porter to the mix and using chipotles. This has added a nice smokiness.

I've just re-made my smoked porter (with some tweaks), and having had a shop bought chipotle sauce fancy having a go at this too.

Chilli Sauce number No. 7 was made on the 27th Nov. 2011, so its had some time to mature.

Made to Rogers Recipe but, it had, in place of the fruit, tomatoes fresh and sun dried, onions & garlic.

I think I lessened the vinegar as the tomatoes are wet and cut back a little on the Sugar too.

I must try the chipotle thing too!
