If I read you right, Rodney, it sounds like you're getting a buildup of pressure. Do you happen to have a fermentation refrigeration system? You could do a munich lager, a weizenbock, or any number of continental lagers that make heavy use of munich. The alkalinity test kit just showed up a couple days ago, and testing the water that comes out of the tap in BS8 gives me an alkalinity of 2.62 meq/L, which works out to 131 ppm by CaCO3. That compares to Bristol Water's report that gives the 2014 annual average as 157 ppm by CaCO3.

Ariel and I can bring as many bottles as our backpacks allow. We'll have a mix of witbeer, carraway-seed APA, and a couple of the oak-aged imperial stouts. Can't imagine we'll run short of beer if each person brings their own bottles or kegs.

If you're asking if it's ok to stir in hops when all the yeast is still there, I can't see any issues, so long as you're not stirring so vigorously as to mix in oxygen. May as well leave the beer on the yeast so the little beasties can clean up their acetaldehyde mess.
