To add a bit more to the query I asked the guy who gets malt for me if he could supply Pilsner Malt and he said, "well we just use lager malt or low colour, what's the difference?"

Yes I would have thought 60min mash a bit short. If I can get to starch end on an ioding test in half hour I reckon I am doing really well but still need to mash on for at least another hour. If SE is a bit behind say 45min to an hour I mash for a total of 2-3 hours.

Pour a glass and leave to come to room temperature if it becomes clear again- yes its chill haze which is caused by proteins in the beer becoming insoluble at lower temperatures and creating haze. When it warms up they go back into solution and the beer clears
