The Kilted Monk - Wee Heavy with some Belgian ingredients

Here's a brew Ariel and I (Eric) brought to the April BCB meeting. It's meant to be a wee heavy with a belgian flavor twist through the addition of dark candi sugar and special B. If this is an extract brew, the high FG may be due to malt extract of limited fermentability. My early extract brews rarely attenuated below 1.022, despite SGs of around 1.055. The difference between what we'll bring and what was tasted at the last meeting is that now it's been kegged and carbonated, and has had a bit of time...

Yeah, my test strips were good enough to distinguish between pH 5.2 and say, 5.6, but anything closer than that looks a bit ambiguous. They're only the paper types from maltmiller. We did check the meter against tap water, and compared that to the water report, with the meter reading within 0.2 pH o...
