Re: Pilsner Malt et al

As far as I know lager malts are less "well-modified" than pale malt (including low-colour pale malt). Meaning, I think, that there is less starch and other long-chain sugars. This is why lagers benefit from multi-step mashing, particularly the protein rest which breaks down amino-acids in...

Re: Recipe formulation methods?

I use BeerAlchemy cos I've only got a Mac at home. It imports & exports BeerXML and .REC files, if that helps. I find Wheeler's book really useful, these days I normally just use it as a guide for making up my own recipes. Sometimes they're rubbish, but usually pretty good. And I tend to go for ...

Re: Knowle Pale Ale

At the moment I chuck in half a campden tablet at the start to drive off the chlorine, and then a teaspoon of gypsum in the boil. Re: Introduce yourself...

Hi, my name's Richard from Frenchay. I've been brewing for just over a year after a demonstration on how to make nettle beer by Andy Hamilton off selfsufficientish.com. Anyway that wasn't enough so I got myself a copy of Graham Wheeler's "Brew Your Own British Real Ale" and have been brewi...
