The wyeast packs have a small sealed plastic sachet in them that contains nutrient. The idea is that you locate the sachet (without opening the packet) and burst it by smacking the packet. Hi Rodney I would recommend the inkbird 310 It is £10 more expensive than the 308, but has the advantage of being programmable in steps. This means you could ferment at say 20C during primary and automatically set the temperature to rise to 22 for a diacetyl rest after 2 days. It has heating and coo...

Hi Rodney I wouldn't use it as it will not be very viable. It is old, not particularly flocculent (as the flocculent cells would have dropped straight after primary fermentation) and also has been exposed to alcohol and pressure for some time.
