As Roger says, beer fermentation is pure culture, Cider is over half a dozen different beasts all doing their job. In Perry it's over 30. Different game.

Looks in the ball park to me Steve. As Ali says fermentability and attenuation is what you're after. You can push the sugar content up above 10% if you like. The hop choice and level looks good too, keep it under 30IBU at that gravity. Stick with Goldings/Styrians/Saaz for aroma. Haven't tried that ...

Yes loads of yeast. I've been in the 1.090/1.100 territory with some of my strong belgians.
Brew a 25L normal strength beer as a starter and use a high gravity yeast.
