Ive never heard of diastatic malt extract until now. Just DME + LME; Dried Malt Extract and
Liquid Malt Extract.
I'm using plain old dried malt extract.
I just went to the brew shop and bought some Maris Otter. I guess this will be what is termed a 'mini-mash'.

Enzyme conversion question - Oatmeal
G'day learned community, I'm about to brew up a stout (roughly), using a partial/mini mash. I've got a bad feeling i need to add some pale malt to my ingredients list though. Could anyone advise if this will work by itself, or should i add/substitute some pale malt?: 500g Flaked Barley 250g Chocolat...

Hmmm, i would agree that i need to look at underlying issues that may cause under-attenuation. So for some time now i've been using an airstone and a fish tank pump, plus making 2L starters in an effort to improve things on the yeast side of fermentation. Beyond that, i use a temp controlled fridge ...

I'll try that with the next beer i do then. I was worried that if i left it with any yeast activity, i'd end up having the yeast destroy those volatile oils i want. But it sounds like that's not the case.
Definitely worth a go.

Stir plate
So I've got this stir plate to help make more yeast in my starters. Can anyone think why using one on an FV wouldn't work. Say if I turned it off before fermentation finished? I seem to never fully attenuate my beers. Looking for ways to improve the situation, and thought of that. Obviously it helps...
